Ingredients

  • 2 cups dark brown sugar, firmly packed

  • 1 cup water

  • 6 cinnamon sticks

  • 2 teaspoons vanilla extract


Instructions

  1. In a medium saucepan over medium-high heat, stir the brown sugar and water together until fully blended. Add the cinnamon sticks.

  2. Bring the mixture to a vigorous boil, stirring occasionally to ensure the sugar dissolves completely.

  3. Once boiling, reduce heat to a gentle simmer and cook for 2–3 minutes, or until the syrup thickens slightly.

  4. Remove from heat and allow the syrup to cool to room temperature. Discard the cinnamon sticks.

  5. Stir in the vanilla extract until fully incorporated.

  6. Transfer the syrup into a clean, airtight container and refrigerate. Use within 3–4 weeks.

Notes

For a thicker syrup, simmer an additional 2–3 minutes.

Light brown sugar can be used for a lighter, sweeter flavor.

If using ground cinnamon instead of sticks, strain the syrup before storing.
