This juicy chicken meatloaf recipe is a lighter, healthier twist on the classic comfort food. Made with ground chicken, aromatic herbs, and a tangy glaze, it’s easy to prepare, family-friendly, and perfect for dinner or meal prep.
Ingredients
For the Meatloaf:
1 lb (450g) ground chicken
1/2 cup breadcrumbs (plain or Italian-style)
1/4 cup grated Parmesan cheese (optional)
1 small onion, finely chopped
2 garlic cloves, minced
1/4 cup milk
1 large egg
2 tablespoons ketchup
1 tablespoon Dijon mustard
1 tablespoon Worcestershire sauce (optional)
1/2 teaspoon dried thyme
1/2 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons chopped parsley (fresh or dried)
For the Glaze:
1/4 cup ketchup
1 tablespoon brown sugar
1 teaspoon Dijon mustard
Instructions
Preheat oven to 375°F (190°C). Grease a 9×5 inch loaf pan or line with parchment.
Combine ingredients in a large bowl: ground chicken, breadcrumbs, Parmesan, onion, garlic, milk, egg, ketchup, mustard, Worcestershire, thyme, paprika, salt, pepper, and parsley. Mix gently until combined.
Shape the mixture into a loaf in the prepared pan and smooth the top.
Prepare the glaze by mixing ketchup, brown sugar, and Dijon. Spread half over the loaf.
Bake for 30 minutes. Remove and spread remaining glaze. Return to oven for 15–20 minutes or until internal temp reaches 165°F (74°C).
Rest for 10 minutes before slicing. Serve warm.
Notes
For a spicy twist, add a pinch of chili flakes to the mixture.
Use ground turkey as an alternative protein.
Omit Parmesan and use dairy-free milk for a dairy-free version.
